Cajun Red Beans and Rice

 

RED BEANS AND RICE

Tips

  Soak beans for about 12 hours until at least double in size

 Boil beans for about 15 minutes and reduce to simmer for about 3 hours

 Do not put a lid on the beans as they simmer and continue to reduce and add water or chicken stock

 Beans are done when you bite a single bean and it is the consistency you like

 Add rice and garnish with chopped green onions

 Ingredients

  •      Two pounds of dry red beans
  •      One or two chopped onions
  •      Four or five chopped celery stalks
  •      One or two chopped green peppers
  •     Cajun seasoning and salt to taste
  •     Garlic and chicken base “better than bouillon”
  •     Bacon pieces and sausage links
  •    One or two slitted large jalapeños
